Marinated Vegetable Salad |
3 Cups Broccoli pieces
3 Cups cauliflower pieces
3 medium carrots, sliced
2 tablespoons water
¼ cup coarsely chopped red onion
1 large red pepper, roasted and cut into strips
½ cup American Garden Caesar salad dressing

1) Put the broccoli, cauliflower, and carrots in a 3-quart microwave-safe baking dish. Sprinkle with water. Cover the dish with plastic wrap and turn back one edge to allow for air circulation.
2) Microwave on high power for 3 to 5 minutes, or until the vegetables are crisp-tender. Stir after 11/2 minutes.
3) Transfer the hot vegetables to a strainer and rinse with cold water. Drain well.
4) Put the vegetables in a serving bowl. Add the onion, pepper strips, and salad dressing.
Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
