Quinoa Salad Jar

Ingredients

  • ‎1 chili pepper, sliced‎

  • ‎1¼ cup Quinoa‎

  • ‎1 cup canned green peas, drained‎

  • ‎1 cup canned corn, drained‎

  • ‎1 cup cherry tomatoes‎

  • ‎1 cup Arugula leaves‎

  • ‎¼ cup cucumber, sliced‎

  • ‎¼ cup carrots, sliced

  • ‎½ cup mint leaves‎

  • ‎1 cup avocado, diced

  • ‎2 tbsp olive oil

  • ‎1 tbsp American Garden lemon juice

  • ‎½ tsp salt‎

  • ‎1 cup American Garden Thousand Island dressing‎

Preparation

  • In a pot, boil quinoa as per the instructions on the box and simmer for 15 minutes. Let sit for 5 ‎minutes then drain.‎

  • Mix in a small bowl American Garden thousand island dressing, olive oil, lemon and salt until ‎combined.‎

  • Pour mixture evenly into 4 jars. Add quinoa then green peas.‎

  • Add corn, cherry tomatoes then some chili slices, cucumber, mint leaves and avocado. Top ‎with arugula leaves.‎

  • Shake jars before serving. Enjoy!‎
