Bruschetta Recipe

This delicious appetizer should be included every time you plan a barbecue among your friends and family. It only takes 15 min to be cooked, and everyone will love it especially your little bundles of joy!

Ingredients

  • ‎1 French baguette, sliced (20 slices)‎

  • ‎4 small-sized eggplants, sliced

  • ‎20 cherry tomatoes, quartered

  • ‎100 g Feta cheese, crumbled

  • ‎4 tbsp olive oil

  • Salt-to-taste

  • Black pepper-to-taste

  • _To prepare the spread:‎

  • ‎5 tbsp American Garden U.S Mayonnaise

  • ‎2 tbsp feta cheese, crumbled‎

  • ‎¼ tsp salt

  • _To garnish:‎

  • ‎3 tbsp capers‎

  • Handful of Basil leaves ‎

  • Few Parsley leaves

Preparation

  • In a small mixing bowl, combine American Garden Mayonnaise with crumbled feta cheese. ‎Season with salt and mix ingredients until well combined. Refrigerate until needed. ‎

  • Brush baguette slices with 2 tablespoons of olive oil. Season with salt then grill for 5min, ‎flipping them once halfway through the process.‎

  • Brush eggplant slices with the remaining olive oil. Season with salt and black pepper then grill ‎them for 5 min on each side.‎

  • Layer baguette slices on a serving dish. Spread a tsp of feta-mayo dip on one of the slices. Top ‎it with few eggplant slices, cherry tomatoes, and feta crumbles. Garnish with capers, parsley ‎and basil leaves.‎

  • Repeat step 4 until the quantity is finished. Enjoy!‎
