This delicious appetizer should be included every time you plan a barbecue among your friends and family. It only takes 15 min to be cooked, and everyone will love it especially your little bundles of joy!
1- In a small mixing bowl, combine American Garden Mayonnaise with crumbled feta cheese. Season with salt and mix ingredients until well combined. Refrigerate until needed.
2- Brush baguette slices with 2 tablespoons of olive oil. Season with salt then grill for 5min, flipping them once halfway through the process.
3- Brush eggplant slices with the remaining olive oil. Season with salt and black pepper then grill them for 5 min on each side.
4- Layer baguette slices on a serving dish. Spread a tsp of feta-mayo dip on one of the slices. Top it with few eggplant slices, cherry tomatoes, and feta crumbles. Garnish with capers, parsley and basil leaves.
5- Repeat step 4 until the quantity is finished. Enjoy!
