Chicken Burger

Ingredients

  • Vegetable oil for frying (As needed)

  • 4 Chicken thighs, skinless, boneless and flattened

  • 1 tsp. Coriander seed powder

  • ½ tsp. Paprika Powder

  • 2 tbsp. Poultry Seasoning

  • ½ tsp. White pepper powder

  • A pinch of Garlic powder

  • A pinch of Onion powder

  • 1 tsp. Salt

  • 500 ml Buttermilk

  • 500 g Plain flour

  • 4 large Soft burger buns

  • 4 slices Cheese

  • 1 Iceberg lettuce, small, finely shredded

  • 2 Tomatoes sliced

  • 6 tbsp. American Garden Mayonnaise

  • 1 tbsp. American Garden Lemon Juice

  • 1 Tsp. Herb Thyme

  • _To prepare dipping sauce:

  • 3/4 cup American Garden yellow mustard

  • 1/2 cup American Garden mayonnaise

  • 1/4 cup Honey

  • 1/4 tbsp. crushed red pepper

  • A pinch of salt

Preparation

  • Toss the chicken thighs in coriander, paprika, Thyme, white pepper and salt until well coated. Pour the buttermilk over the chicken and refrigerate for 4 hours or overnight.

  • Pre-heat oil in a deep fryer or pot at 180°C.

  • Combine the flour, paprika, garlic powder and onion powder. Take the chicken out of the buttermilk and drain a little before coating generously with the flour mixture. Carefully put the chicken pieces in the oil and cook for 8-10 minutes, turning over a few times.

  • Combine mayonnaise and lemon together. Place a piece of cheese on the base side of the bun and toast both sides under a grill. Place the chicken on the cheese then top with tomato, lettuce and a good dollop of mayonnaise mixture.

  • For Dipping Sauce, mix all the ingredients and serve in small sauce dish.
