As tricky as it looks, this recipe is actually super easy to make and tastes like heaven! Serve it alongside your favourite Thai inspired dishes. Your family will thank you!
1- In a large pot, boil 3 litres of water. Submerge noodles in the water. Let soak for 15 minutes.
2- Heat the olive oil over medium heat in a large frying pan. Add the garlic cloves and the chicken chunks. Drizzle 1 tbsp. of Soy Sauce over the chicken and cook until the colour turns golden brown.
3- In a small bowl, whisk the peanut butter, sriracha, sugar, lime juice, 1 cup of water and the remaining soy sauce.
4- Mix the soaked noodles and peanut butter mixture with the chicken.
5- Cook for about 5 minutes then add the green onions, pepper and peanuts before serving very hot!
