Peanut Butter Pad Thai

As tricky as it looks, this recipe is actually super easy to make and tastes like heaven! Serve it alongside your favourite Thai inspired dishes. Your family will thank you!

Ingredients

  • ‎4 Tbsp. American Garden Creamy Peanut butter‎

  • ‎700 g Rice Noodles‎

  • ‎4 Tbsp. Olive Oil‎

  • ‎4 Garlic Cloves

  • ‎300g Chicken Breasts, cut into chunks

  • ‎3 Limes, Juiced‎

  • ‎4 Tbsp. Sugar‎

  • ‎4 Tbsp. Soy sauce ‎

  • ‎2 Green Onions, Sliced‎

  • ‎1 Green Pepper, Sliced

  • ‎100g Peanuts, Chopped.‎

  • ‎1 Tbsp. Sriracha ‎

Preparation

  • In a large pot, boil 3 litres of water. Submerge noodles in the water. Let soak for 15 minutes.‎

  • Heat the olive oil over medium heat in a large frying pan. Add the garlic cloves and the chicken ‎chunks. Drizzle 1 tbsp. of Soy Sauce over the chicken and cook until the colour turns golden ‎brown.‎

  • In a small bowl, whisk the peanut butter, sriracha, sugar, lime juice, 1 cup of water and the ‎remaining soy sauce.‎

  • Mix the soaked noodles and peanut butter mixture with the chicken.‎

  • Cook for about 5 minutes then add the green onions, pepper and peanuts before serving very ‎hot!‎
