This spinach and raspberry vinaigrette recipe is airy, fresh, creamy and best of all, super easy to make! Whether you are hosting a weekend brunch or are looking for a quick Monday meal, this spinach salad is for you!


Ingredients

  • To prepare the salad:
  • 1 bag of mixed baby spinach
  • 2 grilled chicken breasts (optional)
  • 1 avocado sliced
  • ½ cup crumbled feta
  • 1 cup raspberries
  • 2 tbsp of roasted almonds
  • To prepare dressing:
  • ½ cup American Garden Raspberry Vinaigrette Dressing
  • 1 garlic clove
  • 1 cup fresh raspberries
  • Salt and pepper to taste

Instructions

  1. For salad: Combine the baby spinach, sliced avocado, raspberries, roasted almonds and chicken breasts (optional) in a large bowl

  2. For dressing: In a small bowl, combine the ingredients together using a whisk or a blender until the raspberry vinaigrette is creamy.

  3. Serve the salad with the dressing.
