- Vegetable Fried Rice
Ingredients
- 2 Tbsp. Corn oil, for stir-frying 
- 1 Tsp. Minced fresh ginger 
- 1 Medium onion, diced 
- ½ cup American Garden mix vegetables 
- ½ Red bell pepper, deseeded and diced 
- 3 ½ cups Rice, cooked 
- 2 Tsp. American Garden Hot Sauce 
- 2 Tsp. American Garden Soy sauce 
- Ground Black pepper-to-taste 
- ¾ cup cashew nuts, fried 
- 1 green onion, finely chopped 
- Salt-to-taste 
- Pepper-to-taste

Preparation
- Heat oil in preheated wok over medium-high heat. Add ginger and stir until fragrant. Add onion, stir-fry for about 2 minutes until softened. 
- Add the vegetables and stir-fry for 1 minute then add the red bell peppers. 
- Add the rice and toss until heated through for about 2 minutes. Use a spatula to stir the rice in the pan. 
- Stir in soy sauce and pepper. 
- Add cashew nuts and green onion. 
- Season to taste than serve.
