- Vegetable Fried Rice
Ingredients
2 Tbsp. Corn oil, for stir-frying
1 Tsp. Minced fresh ginger
1 Medium onion, diced
½ cup American Garden mix vegetables
½ Red bell pepper, deseeded and diced
3 ½ cups Rice, cooked
2 Tsp. American Garden Hot Sauce
2 Tsp. American Garden Soy sauce
Ground Black pepper-to-taste
¾ cup cashew nuts, fried
1 green onion, finely chopped
Salt-to-taste
Pepper-to-taste

Preparation
Heat oil in preheated wok over medium-high heat. Add ginger and stir until fragrant. Add onion, stir-fry for about 2 minutes until softened.
Add the vegetables and stir-fry for 1 minute then add the red bell peppers.
Add the rice and toss until heated through for about 2 minutes. Use a spatula to stir the rice in the pan.
Stir in soy sauce and pepper.
Add cashew nuts and green onion.
Season to taste than serve.
