Vegetable Fried Rice

In this recipe, rice is cooked with a combination of different vegetables to suit all tastes. Add extra soy sauce for more flavor!

Ingredients

  • 2 Tbsp. Corn oil, for stir-frying

  • 1 Tsp. Minced fresh ginger

  • 1 Medium onion, diced

  • ½ cup American Garden mix vegetables

  • ½ Red bell pepper, deseeded and diced

  • 3 ½ cups Rice, cooked

  • 2 Tsp. American Garden Hot Sauce

  • 2 Tsp. American Garden Soy sauce

  • Ground Black pepper-to-taste

  • ¾ cup cashew nuts, fried

  • 1 green onion, finely chopped

  • Salt-to-taste

  • Pepper-to-taste

Preparation

  • Heat oil in preheated wok over medium-high heat. Add ginger and stir until fragrant. Add onion, stir-fry for about 2 minutes until softened.

  • Add the vegetables and stir-fry for 1 minute then add the red bell peppers.

  • Add the rice and toss until heated through for about 2 minutes. Use a spatula to stir the rice in the pan.

  • Stir in soy sauce and pepper.

  • Add cashew nuts and green onion.

  • Season to taste than serve.
