- BBQ Eggplant Sandwich
Ingredients
1 large sliced eggplant
½ Cup of American garden barbeque sauce
1 teaspoon salt
½ teaspoon black pepper
250 grams of sliced mushrooms
1 large sliced red onion
2 tablespoons vegetable oil
200g mozzarella cheese
4 loaves of Arabic bread
¼ Cups American Garden mayonnaise
8 leaves of sliced lettuce

Preparation
Place the oven rack in inches from the source of the heat, and warm the baking tray on top. note that the tray is wrapped with tin.
The eggplant slices on both sides are painted with 2 tablespoons of BBQ sauce and are spicing with ½ teaspoon salt and ¼ teaspoon black pepper, The Eggplant slices are placed on the tray.
Roast eggplant for 4 minutes until it turns red and becomes soft.
Meanwhile, in a medium bowl, stir mushrooms and red onions with oil, ½ a teaspoon of salt, and a quarter teaspoon of pepper. And then put it aside.
Remove the baking tray from the oven, turn the eggplant slices on the other side, and spread on it 2 tablespoons of barbecue sauce.
Sprinkle the mushroom mixture around the eggplant on the tray and put it in the oven for about 3 minutes until its color turn into brown.
Add a slice of cheese on each eggplant slice and keep grilling for 2 minutes until the cheese melts.
To prepare sandwiches, grease one side of the loaf with a tablespoon of mayonnaise and the other side with a tablespoon of barbecue sauce. Add a slice of eggplant, a little mushroom mixture, and some mozzarella cheese slices at the bottom of the sandwich, and the sliced lettuce.
Serve the most delicious Eggplant BBQ sandwich.
