Falafel Pita Sandwich

This Middle Eastern sandwich with crispy falafel balls, warm pita bread and cold condiments makes for a scrumptious and healthy weekday lunch or dinner. You can also prepare this quick sandwich as part of a weekly meal plan and freeze it. This Arabic delight is loved by all and is super easy to make.

Ingredients

  • 15 cooked falafel balls (homemade, store bought or frozen)

  • 3 tomatoes chopped

  • 1 diced cucumber

  • 1 onion finely chopped (red or white)

  • 1/4 cup finely chopped parsley

  • 1 tablespoon olive oil

  • 5 quantities of pita bread (homemade or use store-bought)

  • Handful American Garden sandwich pickles (sliced)

  • Tahini sauce (homemade or use store-bought; to taste)

  • American Garden Garlic Mayonnaise

Preparation

  • Heat up some olive oil on a griddle or frying pan and coat the pita breads with olive oil until they turn slightly brown

  • Once the bread is nicely heated up cut open the top to reveal the pocket

  • Fill each pita pocket with 3 falafel balls, a tbsp of tomatoes, cucumbers, and pickles. Top this with some onions, parsley, tahini sauce and garlic mayonnaise.

  • And just like that your falafel sandwich will be ready in no time. Serve and Enjoy!
