Ingredients
8 Fish strips, Finger size (Cod / Sole /Halibut)
½ Cup Corn Flour
2 Tsp. Dry Parsley
1½ Cups Drinking Soda
2 Tsp. American Garden Mustard
1 Tbsp. Lemon Juice
Salt-to-taste
Pepper-to-taste
Oil, for frying (as needed)
4 Tbsp. American Garden Horseradish sauce for serving
½ Cup Flour

Preparation
Marinate the fish in a bowl with mustard, lemon juice, dry parsley, salt and pepper. Leave marinated in the refrigerator for 30 minutes.
Preheat the oil in a frying pan.
Meanwhile, in a large bowl, sift flour and corn flour. Pour soda and mix gently using a whisk until just combined. Allow to rest for 5 minutes.
Pat dry fish with a kitchen towel paper and coat with the batter.
Fry fish, turning frequently, for 4 to 5 minutes, until deep golden and cooked through.
Transfer to a paper towel or absorbent paper.
Serve hot with American Garden Horseradish sauce and mustard.
