- Penne in Tomato Mushroom Sauce
Ingredients
6 Tomatoes, medium-sized, ripe red
2 Onions, medium-sized, sliced or chopped
300 g American Garden Mushrooms, sliced
6 cloves Garlic, crushed
1 tsp. Black pepper ground
2 tsp. Italian seasoning
1 tsp. Oregano
1 Tbsp. Chopped Basil
4 American Garden Green Olives
4 American Garden Black Olives
3 Tbsp. Extra virgin olive oil
Salt-to-taste
To prepare pasta:
250 g Penne
4 cups Water
Salt-to-taste

Preparation
To make the penne pasta, boil water with salt in a pan.
Add penne and cook for 6-7 minutes.
Drain pasta and leave aside.
To make the tomato mushroom sauce, heat olive oil in a pan. Add onions and fry them until light brown. Add garlic and fry for an additional minute. Add tomatoes and sauté them till soft. Season with herbs, salt and pepper.
Simmer sauce over low heat for 20-25 minutes, stirring occasionally.
Add the mushrooms and sprinkle with basil.
Pour sauce over pasta, leave to boil then serve immediately.
