Ingredients
- 5/6 Strips Beef Bacon 
- 500g Ground Beef Mince or Lamb Mince 
- 2 Medium Onions, chopped 
- 4 cloves Garlic, minced 
- 2 Carrots, finely chopped 
- 1 Stick Celery, chopped 
- 1 Stick Leeks, chopped 
- 100 ml Olive Oil 
- 1 Tsp. Fresh Thyme, finely chopped 
- 1 Tsp. Fresh Rosemary, finely chopped 
- 250g Tomatoes, chopped 
- 2 Tbsp. American Garden tomato paste 
- 2 Tbsp. Fresh Basil, finely chopped 
- 50g Parmesan Cheese, grated 
- Salt-to-taste 
- Pepper-to-taste

Preparation
- To prepare Bolognese sauce, place a large pan on a medium high heat. Pour olive oil, sliced beef bacon and oregano. Cook, stirring consistently, until the bacon is lightly golden. 
- Add carrots, leeks and celery and stir every 30 seconds for around 3-4 minutes or until softened and lightly colored. 
- Pour in minced meat, breaking it up with the spoon or with a whisk. 
- Add tomatoes, tomato paste, salt and pepper. Cook for 15-18 minutes until the meat is cooked over. 
- Before removing Bolognese sauce from heat add finely grated Parmesan cheese and sprinkle the chopped basil, thyme and rosemary leaves.
